Budget-Friendly Meal Ideas for Large Families: 5 Delicious Recipes under $50 TOTAL

This week's video is all about eating home-cooked meals on a budget. I'm cooking up 5 meals from scratch using as many of my pantry staples as possible and less than $50 in groceries!

Shopping list
1 LB block of cheese – Colby, Colby Jack, Cheddar, your choice
1 can of unsweetened coconut milk
1 large sweet potato
1 bag of baby spinach
1 -2 fresh tomatoes
1 lb of fresh whole carrots
10 lbs of fresh potatoes (we like Yukon gold)
2 - 3 bags of 12oz corn (if your supermarket has larger bags just grab one of those)
3-4 boneless skinless chicken breasts
2-3 lbs of ground chuck
1 can of garbanzo beans
1 32oz bag of dried beans (pinto or great northern work best)
2 boxes of chicken broth

Cottage Pie
1 onion
3-4 garlic cloves
2-4 carrots
1 TBL coconut sugar
1 tsp herbs de provance (or Italian herbs)
1 TBL tomato paste
1 TBL Worcestershire sauce
1 TBL coconut aminos
2 cups of chicken stock
Salt and Pepper to taste
1 TBL tapioca or corn starch
1 TBL water
1 LB ground beef
2 cups of veg (corn, peas, mushrooms, green beans, or any combo of veggies you like)


White Chicken Chili
1 chicken breast
5 cups of white beans
1 box of broth
½ of an onion
4 cloves of garlic
1-2 TBL of cumin
½ tsp dried oregano
1/2 – 1 tsp chili powder
1 TBL onion powder
1 TBL garlic powder
Salt and pepper to taste
½ tsp red pepper flakes
1 TBL flour

Tortilla Shells
1 ½ cups organic flour
1 tsp salt
1 ½ tsp baking powder
3 TBL melted butter
½ cup warm water

Homemade Taco Seasoning
2 TBL chili powder
2 TBL paprika
2 tsp ground cumin
1 tsp onion powder
1 tsp garlic powder
1/2 tsp red pepper flakes
2 tsp redmond's real salt
1/2 tsp freshly ground black pepper
1/2 tsp oregano

Sweet Potato Curry
1 TBL butter
2-4 TBL crushed garlic cloves
1 inch of fresh ginger
1 large sweet potato
2 tsp cumin
1 TBL ground coriander
1 tsp turmeric
1 can diced tomatoes
1 can of chickpeas
2 -3 TBL coconut sugar (or maple syrup)
1-2 cups of fresh baby spinach
Salt and pepper to taste
½ - 1 tsp of red pepper flakes
1 can of coconut milk

Serve over jasmine rice. You can also garnish with fresh lime, cilantro, coconut flakes... whatever you like or have in your budget.
